Today was a busy day and never got in the chance to get a workout in. Am just about to do it now.
But I have two recipes to share
Ham and Vegetable Omelette
serves 1. 1 green, 1 red, 1 tsp
2 eggs, whipped
1 mushroom, chopped
1 green onion, chopped
1 /4 green pepper, chopped
1 tsp olive oil
1/2 blue container of shredded cheddar cheese
1/2 slice lean, low sodium deli ham - diced.
Pepper (as much as you like)
Using a non stick frying pan, heat oil then sautée vegetables until soft. Put aside
Pour whipped eggs into pan and cover until almost cooked through. Place ham and veggies on one half of omelette, top with cheese and use rubber spatula to flip empty side on top of the other. Cover and let heat through.
Serve with hot sauce if that's your fancy. I had a serving of fruit with it.
Lunch was fish!
Blackened Salmon with Spinach, Feta and Lemon/olive oil dressing
Serves 1
1 red, 2 green, 1/2 blue, 1 tsp
1 4oz. salmon filet
Low sodium blackening seasoning
2 containers fresh spinch
1/2 lemon
1 tsp olive oil
1/2 container crumbled feta cheese
On a cast iron frying pan, heat until hot. (Good time to open windows and turn on fan)
Squeeze 1/4 lemon on salmon.
Rub on seasoning
Sear both sides for 3 minutes (yes it's supposed to look burnt!) Take off heat and cover
On plate or salad bowl, lay out spinach. Toss with oil and juice from the rest of the lemon.
Place salmon on top and sprinkle with feta.
I chose to exchange 1/2 cup of spinach for baby carrots.
The red on the dish was juice from a cherry I bit into while putting this together lol
