Day 4

I'm pretty much recovered from the first day workout.  Today was Pilates.  I loved it and hated it at the same time, working muscles I didn't even know existed!! 

Ended up with some crab today.   How on earth are you supposed to eat crab without butter?!?
By making a crab boil with a ton of flavor!  I steamed the crab with paprika, celery seed, lemon, onion, peppercorns, a bay leaf and water (of course).  The meat was flavorful, and naturally salty on its own.  With a cob of corn and small salad, it was a wicked lunch!


But my masterpiece was tonight's dinner.   In total, I only ate 1,105  calories today, but the food was so good that I felt like it was a cheat day! 



Slow Cooked Italian Eggplant
3 servings.   Each = 1 green, 1/3 blue and 1 tsp olive oil
1 long Chinese eggplant.  Halved and quartered
1 tbsp Olive oil
Sea salt and pepper to taste
1 can whole low sodium canned tomatoes, crushed
Italian seasoning (salt free variety)
1 blue container freshly shredded Parmesan cheese

Layer eggplant on bottom of crockpot, skin side down.  Drizzle evenly with olive oil
Spoon crushed tomatoes on top of eggplant, pouring remaining on bottom.
Sprinkle as much Italian seasoning as you like, then sprinkle cheese evenly over top. 

Cook on high for 4-6 hours.
