Day 9



I'm getting out of the habit of eating all the time.  Good and bad.  Good because I'm not eating junk
Bad because I should be eating more healthy foods to keep my metabolism going.    

No breakfast this morning, I slept right in - as in almost 10:00.  I think I'm finally getting over my tummy bug.

Poached eggs and toast for lunch

Did my Upper fix, this time not moderated (yay!)

Supper was a (very dried out) pita with lettuce, tomato, cucumber and leftover chicken from last night. 

Now I'm craving something sweet.  Looked up a recipe for apple crumble but found nothing suitable.  So made up my own


Healthy Choice Quick Apple Crumble
1 purple, 1.5 yellow, 3 tsp

Apple mix
1 apple - peeled, cored and chopped
1/2 tsp cinnamon
1/4 tsp nutmeg 
Pinch of corn starch
1 tsp coconut oil
1 tsp honey

Crumble topping
1/4 cup uncooked oatmeal, minus 1 tbsp 
1 tbsp whole wheat flour
2 tsp coconut oil
1 tsp honey
1 tsp cinnamon
Pinch of salt
Pinch of ground cloves (optional)



Mix apple mix in microwave safe bowl. 
Microwave for 1 minute
Mix crumble ingredients until crumbly. 

Put on top of cooked apples and microwave for another 2 minutes. 


This is packed full of spice without overloading on the sweetness :)  I only had quick oats, so it's not as pretty as it should be, but yum!!
